I was hooked after trying a variation of these at Nando's Peri Peri. These peas are refreshingly minty and a tad spicy. They're quick enough for a weeknight, and pretty enough for a potluck.

1 Cup thinly diced onions
2 Cloves garlic
Handful of fresh mint
2 Teaspoons thinly diced jalepeno
3 Tablespoons butter or olive oil
4 Cups fresh or frozen peas
Salt, to taste
1. If you're working with fresh peas, start by boiling them for 3-4 minutes in salted water, 'til tender. Drain and set aside. If you're using frozen, you can skip this step.
2. In a pan on medium-low heat, cook onions, garlic, mint, and jalapeño in 2 tbs of butter/olive oil for 2 minutes. Add peas and 1 tbs butter/oil, and cook on medium for 5 more minutes
3. Turn off heat and remove about half of peas from pan. Puree them in an immersion blender, or mash with a fork.
4. Return mashed peas to pan and cook for another 2-3 minutes, until well combined
