This apple porridge tastes like a grown-up version of Apple & Cinnamon Quaker Oats. The combination of caramelized apples, cinnamon, and almond butter is delicious and nourishing. This recipe cooks up fast and reheats well.
1 Tbsp butter
2 Apples, peeled, cored, and diced
1.5 Tbs orange juice
2 Teaspoon vanilla
1 Tbsp honey
½ Teaspoon cinnamon
¼ Teaspoon nutmeg
3 Tbsp almond butter, crunchy or smooth
Optional: Dried fruit and nuts to garnish
Melt butter on low in a sauce pan, then add orange juice and apples. Stir, coating apples in butter and juice. Add vanilla, cinnamon, and nutmeg and cook on low, stirring frequently.
Cook until the apples are soft and beginning to caramelize (your kitchen will smell amazing). Transfer to a bowl, then add almond butter and honey. Puree everything for a hot second with a stand mixer/immersion blender. Don’t over-blend! The porridge is best when it's thick and chunky
Top with nuts and fruit, if you wish. Roasted salted pecans are a great addition.
