I first tried these at a holiday party and ended up eating half the tray (I am arguably not a great party guest). They're sweet, salty, crispy, and chewy — I'm actually drooling a little, just thinking about them. They are also very cute, and dangerously easy to make.

16 oz Package of Paleo/SCD-friendly bacon
20 Large, pitted dates
- Preheat oven to 325. The low heat gives the dates time to caramelize.
- Cut each strip of bacon in half
- Wrap one half-slice of bacon around each date and place on baking sheet, seam side down. Pierce with toothpick, to hold in place.
- Bake for 30-35 minutes, 'til bacon is crisp. Allow 10-15 minutes to cool before serving
