I fully stole this recipe from my roommate. (Hi, Amanda!) She once made this soda for a house party, and I surreptitiously drank half the pitcher before any guests arrived.
Try this out at a barbecue or cocktail party. You can easily make the syrup ahead of time. If you'd like to make it booze-y, I'd recommend adding rum, tequila, or gin.
Total Time: 20m
6 sprigs of fresh rosemary
In a small saucepan, combine honey, water, and rosemary over low heat. Stir to combine. Cook on low for about 10-15 minutes, stirring frequently.
Strain out rosemary, and transfer syrup to a glass jar.
Add about two tablespoons of syrup to 8 oz of chilled mineral water. Add lime juice to taste, and stir well. Pour over ice and enjoy!
